Taco Popcorn

Making popcorn for dinner is a must on those nights that you don't feel like cooking. It's so simple and hard to mess up, and to top it off you only dirty one bowl, so clean up is easy too.

We were feeling munchy for tacos but didn't want to take the time to make them, so this idea was born. Taco popcorn!

Ingredients:

I am not putting exact measurements because you can add as much as you want!

Taco seasoning
Mozzarella cheese ( I let mine come to room temperature)
Butter
Popcorn
* for my popcorn I use my air-popper
** Also if you like spicy I mixed some jalapeno juice in with my butter and it made the flavors pop!

The way I mix everything in:
Put your popcorn in a large bowl. Then with a spoon drizzle your melted butter on, sprinkle your Taco seasoning on then stir. Repeat this until you have enough seasoning on your popcorn.

 It's so addicting!

Hope you enjoy this popcorn idea because we sure do love it!

Homemade Caramel Popcorn

Our new family tradition is to eat popcorn for dinner on Sunday.

We tried out this recipe and took pictures so I could share it because it turned out DELICIOUS!

We had tons left over and it has kept well in a ziploc bag.

First, Pop your popcorn in your air popper. We did half a cup of kernels and it was the perfect amount.

Second, gather your ingredients.
* 10 cups air-popped popcorn
*1 cup packed light brown sugar
*1/4 cup light corn syrup
*1/2 cup unsalted butter (1 stick)
*1/8 teaspoon cream of tartar
*1.2 teaspoon salt
*1/2 teaspoon baking soda

Third, Preheat the oven to 200 Degrees Fahrenheit.

Put your popcorn onto two baking sheets.

Put the butter, brown sugar, corn syrup, cream of tartar, and salt into the sauce pan.
(DON'T ADD THE BAKING SODA YET)

Fourth, On medium-high heat, stir your ingredients constantly and bring it to a boil for about 5 minutes. The color of the sauce will change from dark to light.

Fifth, Remove from heat and QUICKLY stir in the baking soda. Then pour the caramel over the popcorn and gently fold until all the kernels are coated.

Sixth, Put it in the oven and bake for 1 hour stirring every 20 minutes.

Finally, Allow it to cool on the pan and break the larger chunks apart if you wish. IF you have leftovers put in a ziploc bag and it will keep for up to 2 weeks.
